A friend of mine put a challenge to me. “Can you make a Banana Bread that is low calorie?”
Well knowing me, that sent me into “figure it out” mode. So with a little research, and a very brave, albeit happy taste tester (thank you honey) we have success!!!
The Taste Tester had this to say about the “healthy” version of a family favorite.
“The texture is a bit different then the original. It is a bit denser but still very tasty.”
With out further ado:
Low Cal/Fat Banana Bread
1/2 Cup Applesauce
1/2 Cup Sugar
4 Mashed Bananas (let go almost black)
2 eggs
1 1/4 C All Purpose Flour
1/2 tsp Salt
1 tsp Baking Soda
1/8 tsp Nutmeg
1/8 tsp Cinnamon
Pre-Heat Oven to 350*
Mix Applesauce, Bananas, and eggs with sugar till creamy. Sift together dries and add to wets 1/3 of it at a time. Scraping the bowl after every edition. Oil large bread pan with either vegetable oil or non-stick spray. Pour in mixture and even out. Place in middle of oven for 45-60 min or until a toothpick comes out clean. Pull from oven and let rest for 30 min before slicing.
