Ok here is today’s update.
On the truck….No update! But it’s Mother’s day..WHAT DO YOU PEOPLE EXPECT FROM ME!!! lol! ;)
But, we did some menu testing today.
Mac-n-Cheese.
The first run out of the gate…Meh?
It wasn’t bad, but it was a bit too pale and a bit to texturally unpleasant.
We went with Havarti, Smoked cheddar, (thought yellow but turned out to be white), and Asiago.
The smoke was a bit too overpowering and the outter rind didn’t melt like I would have wanted, so it gave you chunky bits.
The Asiago acted like Mozzarella and got a bit stringy so you got chunks from that as well.
BUT, the pasta was good! LOL Multi grain Rotini.
Work in progress! Will try a different blend. Unfortunately, American Cheese Product makes the best, most creamiest cheese sauce, BUT, that kinda goes against our “no processed” moto! ;)
